Courtesy of our free Vegetarian Recipes Newsletter
Ingredients:
- 8 pears (I like organic d'Anjou), peeled, cored, and sliced
- 3/4 cup cranberries (I like organic), whole
- 1 Tbs lemon juice
- 1 Tbs All-purpose flour
- 2 Tbs sweetener (like maple syrup, brown rice syrup, corn syrup)
- Pinch of salt
- 1/2 cup All-purpose flour
- 1/2 cup oats (old fashioned)
- 1/2 cup walnut pieces
- 1/3 cup butter
- 1/2 cup packed brown sugar
- Pinch of salt
Preparation Instructions:
Preheat oven to 375F, lightly grease an 8x8 inch baking dish.
In a large bowl mix the pears and cranberries with the lemon juice, 1 Tbs of flour, sweetener, and salt. Mix just enough to coat evenly.
In another bowl mix 1/2 cup flour, oats, walnuts, brown sugar, butter, and salt until it resembles crumbs. I use my hands.
Put the fruit in an even layer in the pan and sprinkle the topping over it.
Bake until browned and crisp on top and bubbly on the edges.
